Christmas Breakfast

Christmas is all about the kids, right? Or at least thats what I tell myself when I’m going all out for Christmas. To be honest, its just a good excuse to go all out and have a lot of fun! Christmas Breakfast is one such opportunity. With a little imagination and a bit of forward planning, your normal breakfast can be jazzed up a bit to make it more Christmassy. If your house it too chaotic on Christmas morning, maybe do one of these in the run up to Christmas Day, once the kids have broken up from school.

I’ve compiled a bit of a gallery of ideas for you. Most are clear from the photo what to do, so this is purely for inspiration. I have tried a few of these, but not all. They have certainly gone down very well. When life wasn’t quite so busy in December, I used to do one of these on the 1st December to start the festivities. I didn’t quite manage it this year, so we’ll do one of these on Christmas morning instead.

Scotch Pancake Recipe

Serves 6

Ingredients

  • 250g self raising flour
  • 2 eggs
  • 300ml milk
  • toppings of your choice

Method

  1. Mix all the ingredients together.
  2. Add some oil to a large frying pan and heat. When the pan is really hot, pour in a small amount of batter. About 2-3 tbsp at a time so that the pancake spreads to approximately 8-10cm. You should be able to get several in the pan at once, depending on how big your frying pan is.
  3. Cook on one side until golden, then flip over and cook on the other side.
  4. Serve with your choice of toppings.

Waffle Recipe

Serves 6

Ingredients

  • 250g plain flour
  • 2 tbsp sugar
  • 2.5 tsp baking powder
  • 1/2 tsp salt
  • 350ml milk
  • 80g melted butter
  • 2 eggs
  • toppings of your choice.

Method

  1. Mix all the dry ingredients in a large bowl
  2. Combine the wet ingredients together in a serrate bowl. Add this to the dry mixture and beat until the batter is smooth. Leave it to stand for 5 mins.
  3. Spray your waffle maker with oil, and bring it up to temperature.
  4. Pour some batter into each space. Be careful not to overfill or the batter will overspill.
  5. Close the waffle maker and bake for 3-5 mins or until golden brown.
  6. Remove the waffles and place them on a wire rack. Put them in a low oven to keep them crispy.
  7. Repeat with the remaining batter.
  8. Serve with syrup, fruit, or crispy bacon.
