Happiness Pancakes

Those of you that follow me on social media will know my eldest is a bit of a worrier. In an attempt to cheer her up on a weekend where she was particularly miserable, I decided to make happiness pancakes for breakfast. I can’t take credit for the recipe. I’m not sure where that came from originally. But the idea associating them with having a happy day is mine.

As I put them on the table, I told my kids that these were filled with happiness. Having them for breakfast means we will have a happy day. Of course, on its own happiness pancakes are not the answer, but they certainly help put the kids in a positive mindset for the day. The breakfast equivalent of a warm hug.

So here they are. Happiness pancakes. This recipe will easily fill up my family of 5.

Ingredients

  • 250g self raising flour
  • 2 eggs
  • 300ml milk
  • oil for frying
  • food colouring (I used blue, yellow, pink, and purple, but you can use whichever colours you fancy, or have in your cupboards)

Method:

  1. Whisk the flour, eggs and milk together until smooth.
  2. Divide the mixture into equal bowls for each colour.
  3. Add your colour to each bowl. The amount you need will depend on the colour you have. Start with a little and add more if you need to.
  4. Heat the oil in a frying pan. When it is hot, pour in small amounts of batter.
  5. Cook until the top is almost set, then flip over to cook the other side.
  6. Serve them warm or cold with whatever toppings you prefer.

I sometimes add raisins to my batter, just to mix it up a bit. You can add whatever you fancy to them. Blueberries, strawberries, banana, grated apple. Or go for a savoury option with some grated cheese, chopped bacon, or spinach, chopped pepper. The possibilities are endless.
