Melted Snowman Biscuits

My youngest enjoyed making these biscuits. Although, I’m pretty sure she enjoyed eating them a lot more! This recipe will make approximately 24 biscuits.

Ingredients

for the biscuits

225g self raising flour

100g butter

1/2 tsp vanilla essence

100g caster sugar

1 egg

1 tbsp milk

for the decoration

200g icing sugar

water to mix

smarties (enough for 2 per biscuit)

black and orange writing icing (or food colouring and a piping bag)

marshmallows (enough for one per biscuit)

Let’s get baking…

Preheat the oven to 190oC/Fan170oC/Gas 5. Line two baking trays with greaseproof paper.

Measure the four and the butter into the mixing bowl. Rub in the flour and butter together until it resembles breadcrumbs.

Add the vanilla extract, the sugar, the beaten egg and the milk. Mix with a wooden spoon to form a stiff dough.

Roll out the dough onto a floured surface. The dough should be abut 5mm thick.

Cut into circle shapes. We used a glass to cut ours. You can use a circle cutter if you have one to hand, or the top of a glass or mug work just as well.

Place the biscuit onto your prepared baking tins, and bake in the preheated oven for 10-15 mins until golden brown. Cool them on a wire rack before decorating.

For the icing…

Use the writing icing to draw some eyes and a nose on the marshmallows. You will need one for each biscuit.

Sift the icing sugar into a bowl. Gradually add the water, a little at a time. Mix well between each addition. You need to icing to be a smooth spreading consistency.

Spread some white icing on to each biscuit. add a marshmallow, and some smarties for buttons. Leave the icing to set.
